This creole Beer Butter recipe is from Prairie Smoke and Spice in Regina
They used it on a turkey breast but I think it would be fantastic with a boneless pork leg. I use half this amount on one of our 4lb boneless legs
Ingredients
- 1/2lb unsalted melted butter
- 1/2 can craft Pilsner (I used Rebellion Hazy IPA)
spice mix
- 1/2 tablespoon all purpose bbq rub - I make my own bbq spice mix
- 1/2 tablespoon paprika
- 1 tablespoon freshly ground black pepper
- 2 teaspoons granulated garlic
- 1 teaspoon granulated onion
- 1 teaspoon salt
- 1 tablespoon Mustard powder
- 1 teaspoon cayenne - Directions
- blend spices together in spice grinder - this is to prevent them blocking the needle
- Add them to a saucepan with butter and beer and heat stirring to stop spices settling on the bottom of the pan - this will help avoid blocking the needle.
