Pulled Berkshire Pork (slow cooked)
Ingredients
- 3-4lb Berkshire Pork Roast
- 2 bay leaves
- 4 tablespoons apple cider vinegar or lemon juice
- 3 medium/large apples cored and chopped into chunks
- 3 crushed garlic cloves
- ½ tablespoon whole black peppercorns
- ½ tablespoon fennel seeds
- 1 tablespoon smoked paprika
- ½ tablespoon cumin seeds
- 2 teaspoons ground cinammon
- 2 teasspoons chilli flakes or 1 teaspoon chilli powder
- 1 tablespoon sea salt
Directions
- Preheat oven to 325 degrees F 
- Put the apples, cider vinegar or lemon juice and bay leaves into an ovenproof casserole dish. 
- Grind black pepper, fennel, cumin, paprika, cinnamon, chilli flakes and sea salt then mix in crushed garlic. 
- Score the pork fat on the pork roast and rub roast with spice rub. 
- Put pork on top of apples and put in the oven for 6 hours. ****You Cook this in a slow cooker on low for 8 hours or high for 4 hours**** 
- At the end of the cooking time take the pork out and shred it, then toss it back in with the apples and keep warm until ready to serve.
