Spiced Gluten Free Batter
I don’t know where I came upon this recipe but I love it as an alternative to beer batter for fish.
I always make goujons because I love the batter and its easier to fry them in a small amount of oil or lard.
I use it for battered fish or vegetables. I do grind my own chickpea and rice flour because I don’t have to keep a stock of different types of flours.
Ingredients
- 1 cup gram flour (chickpea flour) 
- 1/2 cup rice flour 
- 1 tsp salt 
- 1/2 tsp cayenne powder 
- 1-2 tsp your favourite curry powder 
- 1 tsp garlic powder 
- 1 tsp baking powder 
- some chopped fresh chilli (optional) 
- water to mix - Directions
- Mix all dry ingredients 
- Add enough water to make the batter thick enough to coat the back of a spoon 
- Coat your veg or fish and fry in hot oil
