Spiced Gluten Free Batter

I don’t know where I came upon this recipe but I love it as an alternative to beer batter for fish.

I always make goujons because I love the batter and its easier to fry them in a small amount of oil or lard.

I use it for battered fish or vegetables. I do grind my own chickpea and rice flour because I don’t have to keep a stock of different types of flours.

Ingredients

  • 1 cup gram flour (chickpea flour)

  • 1/2 cup rice flour

  • 1 tsp salt

  • 1/2 tsp cayenne powder

  • 1-2 tsp your favourite curry powder

  • 1 tsp garlic powder

  • 1 tsp baking powder

  • some chopped fresh chilli (optional)

  • water to mix

    Directions

  1. Mix all dry ingredients

  2. Add enough water to make the batter thick enough to coat the back of a spoon

  3. Coat your veg or fish and fry in hot oil
