Instant Pot Baked Beans (no soak)

I always forget to soak dry beans so this no soak method is a perfect recipe for baked beans in about 1 hour.

Ingredients

  • 9 oz dried beans - I use navy beans

  • 1 dried bay leaf

  • 1 tbsp bacon fat/butter or lard

  • 1 large onion diced

  • 1 stick celery chopped

  • 2 cloves garlic grated

  • 1 tsp ground cumin

  • 1/2tsp smoked paprika

  • 3⁄4 tsp dried oregano

  • 3⁄4 tsp dried thyme leaves

  • 1 tbsp tomato puree

  • 1 28 ounce tin whole tomatoes - or 1 1/2lb frozen tomatoes

  • 1 tbsp molasses

  • 500 ml pork bone broth or stock from cooking a cola gammon ham

  • 1⁄4 - 1⁄2 tablespoon tamari or soy sauce

  • Salt and pepper to taste

    Directions

  • You can just put everything into the instant pot. Stir and cook for 45 mins on bean setting - or high pressure. Let pressure release naturally

  • OR you can saute onion in bacon fat or butter then add to the rest of the ingredients and continue as in step 1

  • Remove bay leaf and serve.

  • I always freeze beans in small portions.
