5 Quick and easy recipe ideas for smoked pork chops or left over ham!
Last week, I opened a packet of our smoked pork chops. My goal wasn't just to cook a single chop for dinner, but to use the Hickory Smoked Flavour to add depth to several different meals. If you have smoked chops in the freezer—or even leftover Christmas ham—here is some quick recipe inspiration to make your pork go further.
Smoked Pork Stovetop Chilli
Make a big pot of chilli and add one finely diced smoked pork chop to your ground meat (I use 1 ½ lbs each of ground pork and beef). It’s an easy way to get Hickory flavour into a stovetop chilli without the wait.
Bacon and lentil soup
Our smoked pork chops have the same flavour as our hickory-smoked bacon, so I cut the fat off the chop, then rendered it in a pan. You can of course, add some smoked pork chop to this soup, but I didn’t. I just fry some chopped onion in the fat and add a cup or so of lentils plus some pork or chicken stock. Bring to the boil, season and blitz up with an immersion blender. This was a very filling soup!
Ham and Pineapple Pizza
Yes, pineapple belongs on pizza—especially when it’s paired with our hickory-smoked pork. Just cube up a smoked pork chop and scatter it over your favourite pizza base. The smoked pork pairs with pineapple perfectly. It’s our farmhouse upgrade to a classic favourite.
Ham and Cheese Frittata
This is great for a fast no recipe meal. I just whisk up 6 eggs with a splash of milk or cream, then stir in some diced ham and a good handful of shredded cheese. Melt some lard into my cast-iron skillet and cook it on the stovetop until the edges are set, then pop it under the broiler for a few minutes until the top is golden and puffy. It’s the perfect way to use up those last few slices of ham.
Ham and pineapple stir-fried rice!
We loved this, and it’s a great way to use up odds and ends in the fridge! It is a great 10-minute dinner. I just slice up smoked pork or ham into thin strips and toss it into a screaming hot wok or cast iron skillet with some lard. Add in some leftover rice, fresh pineapple chunks, peppers, mushrooms, and onions - whatever you have in the fridge. A splash of mushroom soy sauce and a little honey is all you need—the hickory smoke from the pork seasons the whole dish as it sears.
