3,2,1, Pork Chops with Hot Honey Butter
Pork chops can sometimes be difficult to cook and keep juicy. The secret to cooking them is starting with a cold pan, room temp chops and not messing with them.
The hot honey butter can be made ahead, it’s simply hot honey and butter. I make hot honey and keep it in the fridge. It is perfect drizzled on crispy food like roast potatoes, crispy pork belly or fried chicken.
You can make the hot honey as spicy as you like. I took the seeds out of a Thai chilli to keep the heat down. You can use dried chilli flakes, jalapenos, whatever you like to make this.
Hot Honey
Ingredients
1/4 cup honey,
1 chilli deseeded if you don’t like it too spicy
Directions
Make the hot honey: Put 1/4 cup honey and 1 chilli in a saucepan on medium heat. Bring to a simmer
Allow to cool: Turn off the heat and allow chilli to cool in the honey.
Taste and remove chilli: Taste the honey once it is cool enough. I found 1 chilli to 1/4 cup was a perfect balance of heat and sweet but feel free to adjust by adding more chilli or honey.
Store in the fridge: Strain the chilli and store in the fridge for up to a week.
Hot Honey Butter
Ingredients
2 oz room temperature butter
2 teaspoons hot honey
Directions
Make the hot honey butter: Mix hot honey and butter together, either with an immersion blender or in a bowl
Make a honey butter log: Put it in greaseproof paper and roll into a log about 1” diameter
Store: I keep mine in the freezer, ready to use.

Ingredients
1” thick Berkshire Pork Chops per person (The cooking time will vary depending on the pork chop thickness - For thicker chops I added a minute per side until I got an internal temp of 155°F)
Directions
Prepare your chops: Bring the chops to room temperature and score the fat, this prevents the chops curling during cooking.
Start Cold: Place your room-temperature pork chops into a cold, dry skillet.
3-minute sear: Place the skillet on the stove and turn the heat to medium. Let the pork chops cook for 3 minutes without moving them.
Flip the pork chops: Use a spatula to press down firmly and evenly for a few seconds and cook for another 3 minutes.
2-minute sear: Flip the chops Use a spatula to press down firmly and evenly for a few seconds and cook for 2 minutes.
Repeat the 2 minute sear: Flip the chop, press down firmly and evenly for a few seconds and leave it to cook for 2 minutes.
1-minute sear: Repeat the process with a 1-minute sear on both sides.
Cook to Temp: Check the internal temperature which should be 155°F, If it isn’t repeat the 1 minute sear. The total cooking time will vary depending on the thickness of your pork chops.
Allow the pork chops to rest: Immediately transfer the pork chops to a plate and let them rest for 5-10 minutes. This is a crucial step that allows the juices to redistribute, ensuring every bite is moist and flavorful.
Serve: Enjoy your perfectly cooked pork chops with 2 pats of hot honey butter.
