My favourite turkey leftover curry
I usually add any left over veg to my curry… even bread sauce if we have any left - which isn’t often.
Ingredients
- 2tbsp lard (or butter, coconut oil, ghee) 
- 1.5lb Left over turkey 
- 3 tsp ground cumin 
- 3 tsp turmeric 
- 2 tsp ground coriander 
- 2 tsp fennel seed 
- 2 tsp garam Masala ( I can't always get this locally so i use curry powder - madras is my favourite) 
- 1/2 tsp cayenne or I sometimes use chilli sauce to taste... optional 
- 2 large onions chopped 
- 6 cloves garlic chopped 
- 2 tbsp tomatoe puree ( I don't always have this so leave it out if you don't have it.) 
- 1 x 796ml tin whole tomatoes or a couple handfuls of fresh diced tomatoes 
- 2 cups of bone broth or left over gravy 
- Salt and pepper to taste 
DIRECTIONS
- Heat coconut oil/ghee or lard over a med heat in a large pan. 
- Add all spices and take off heat - you do not want them burn. 
- Stir in chopped onions put back on heat and fry for 5 mins then add in garlic, a large pinch salt and pepper & tomato puree. 
- Add tomatoes, left over turkey, broth or gravy and simmer for about 30 mins. The slower and longer it cooks the better. 
Serve with rice.
