Debbie one of our Registered pig buyers sent me this recipe - I used to love deep fried brie with apricot sauce so I can’t wait to try this!

BAKED BRIE IN PHYLLO DOUGH WITH APRICOT OR RASPBERRY PRESERVES

YIELD: 10 Servings

INGREDIENTS

2 Sheets of phyllo dough

1 (8 ounce) package brie cheese, round

1 cup toasted walnuts very coarsely chopped

1cup raspberry preserves or 1cup your favorite preserves.

TOPPING

1 cup walnuts very coarsely chopped

¼ cup brown sugar

½ cup maple syrup

DIRECTIONS

Preheat oven to 425.

Place phyllo pastry in a greased pie plate

Place preserves on phyllo dough

Place toasted walnuts on top of preserves.

Place cheese wheel on top (leave rind on).

Bundle and neatly fold the phyllo dough up and around the cheese.

Brush with melted butter

Bake for 20-25 minutes.

Let cool for five minutes.

TOPPING

Toast walnuts for 2 minutes constantly stirring

Add brown sugar stir till sugar melts

Add maple syrup and heat through for about a minute

Pour mixture over cooked phyllo and brie bundle.

Serve with your favorite crackers.
