Tomato Soup

This is a really quick recipe and way better than any tinned tomato soup. The key to a delicious soup is homemade pork bone broth - I prefer pork broth but you can use any home made broth.

Ingredients

  1. 2 Tablespoons butter

  2. 1/2 cup chopped shallots or onions

  3. 1 clove garlic grated

  4. 1 x 28-ounce can diced tomatoes or 28 oz frozen tomatoes

  5. 1 cup (250ml) pork bone broth

  6. 1/2 (125ml) cup cream

  7. Salt and pepper to taste

Directions

  1. Melt 2 tablespoon butter in a large pan.  Add 1/2 cup shallots or onions and sauté until soft (2-3mins). Add 1 clove grated garlic and saute for 1 min more - be careful not to burn the garlic.

  2. Add 28 oz tomatoes and 1 cup pork broth. Bring to the boil and simmer for 5 mins

  3. Blend the soup with an immersion blender. Add 1/2 cup cream and season to taste. 

  4. Serve - I garnish with olive oil and chopped onions but you can use any of your favourite garnishes.
