Wild rice & mushroom soup
Ingredients
- 2 tablespoons butter 
- ¼ cup - Wild Rice (UNCOOKED) 
- 8oz Mushrooms 
- 1 ½ cup Berkshire Pork Bone broth 
- ¼ cup - chopped onion 
- ¼ cup - chopped celery 
- Salt to taste 
- 1 clove minced garlic or ½ teaspoon dried garlic 
- ½ teaspoon Poultry Seasoning or a mix of parsley, thyme and marjoram 
- ½ teaspoon Black Pepper 
- 1 cup Coconut milk (you can just use milk if you prefer) 
Directions
- Put the instant pot on saute. Add butter and sauté sliced mushrooms 
- Add Wild Rice, Pork bone broth, chopped onion, chopped celery, Black Pepper, Salt, Poultry Seasoning, coconut milk and minced garlic. Stir well. Cover it. 
- Pressure cook it on high pressure for 45 minutes. Quick release pressure. 
- Serve.
